Use up that gnocchi 

Lidl do pre made, ready to go gnocchi that’s vegan! Whoooo! Except I buy it and then it sits in the cupboard unused for months. 

I originally bought it to have with red peppers and a paprika sauce but as usual I forgot about them. So to use them up this time we’ve had them with artichoke, red onion and pesto. 


There’s three steps to this…

1. Boil the gnocchi until it floats

2. Fry them in a pan with the other ingredients. 

3. Add in your pesto. 

That’s all there is to this one. I used tinned artichokes instead of the posh deli ones as they are cheaper and you get double the amount of artichokes. I didn’t even make my own pesto I used Sacla free from pesto. 


It’s quick, easy, completely from a packet, jar or tin but it’s used up the gnocchi and make a tasty dinner after work.
