One Pot Coconut Curry

While I love curry and would happily make it every day sometimes I want to be super lazy and just throw everything in a pot, ignore it for a bit and then have a delicious meal at the end of it. This is one of those meals.

Here I’ve taken 400ml of coconut milk, 400ml of water and mixed with with ½ tsp of chilli flakes, ½ tsp of garlic powder and 2 tsp of curry powder. On top I’ve then added half an onion, half a red pepper, 5 baby plumb tomatoes, ½ cup of frozen sweetcorn, ½ cup of frozen spinach. ¼ of the bottom bowl bit of a butternut squash and a good heaping spoon of peanut butter to thicken the sauce.

Cover the pot and pop it in an oven at 180c for 45 minutes and tada! Curry.

So I don’t waste anything I’ve also roasted the seeds at the same time and then put them on top of the finished curry with some coriander.

Simple. Lazy. Tasty. Curry.
