Everytime we travel I get inspired by all the tasty food we have. Last month we went to London with our friends Aaron and Mitch so we took them to our favourite restauraunt in Peckham – Persepolis aka Snackistan. Everything there is either vegetarian or vegan and it’s all so flavourful. Here is my tofu scramble breakfast inspired by our visits.
Starting from the bottom we’ve got lavash spread with harrisa spiked coconut yogurt, topped with onion tofu scramble and coriander. It’s never going to live up to Sally’s tofu scramble creations but it hit’s the spot while we wait to return.
