Leo’s Samosa

Samosa’s brought to you by Leo.

Dough
2 cups plain flour
4 tbsp oil
5-6 tbsp water
Salt to taste

Filling
300g cooked potatoes
1 cup green peas
½ tsp cumin seeds
chili flakes to taste
a pinch of asafoetida (hing)
½ tsp of salt
2 tbsp of spice mix

Samosa spice mix
1/2 tsp of cinnamon
1 clove
1 green cardamom
½ tsp cumin
½ tsp fennel seeds
1 tsp coriander seeds
2 tsp dry pomegranate seeds

Method –
1. Start off with the dough. Add the flour, oil and salt to the bowl and then add in 5 tbsp of water, you can add in the extra tbsp if you need it but start off with less. You want to end up with a soft but stiff dough. Once it’s all come together put it asside to rest while you make the filling.
2. Chop your potatoes into cubes, add the peas and spices and mix well. Simple.
3. Ok now the fiddly bit, stuff your samosa. I can’t describe this so that it makes sense but that’s why there is a video!
4. Put your finished samosa on a baking tray and bake at 200 for 20 minutes.
