I saw this recipe on Facebook, it was an advert for gousto that just wouldn’t leave me alone. A simple chicken mole made with green and blacks chocolate bit looked lovely… Why did it have to contain chicken!
The answer was to veganize it. The only parts of the recipe we couldn’t have were the chicken and the chicken stock. Stock is simple, just swap it for a vegan one, but what to have instead of the chicken?
I have a few go to meat replacers, there’s tofu, mushrooms, just add in more vegetables or just leave the meat our completely. Given how rich the sauce looked I decided on tofu. It will soak up the sauce like a sponge and it will also add a nice creamyness to it. Plus I really like tofu.
